Remove the loaf tin with the base in it from the freezer and place the coconut and pineapple layer on top, press it down evenly, you may need to smooth it down with the back of a spoon. Freeze the entire slice for 3 hours to set. Remove slice from freezer and sprinkle desiccated coconut over the top.
